Healthy Eating Recipes

The second session of our Healthy eating workshop was a great success once again. The workshop has proved such a success that we will be running a few more sessions before actual classes commence in September.

Today the class made Dahi Vadas which are lentil dumplings topped with a spicy yogurt and tamarind sauce. These are great as a side dish for a formal dinner or as a snack.

Dumplings in Yoghurt (Dahi Vada)

Ingredients:

50f Masoor Dhaal (Split orange lentils)

50g Urid Dhal (Black Gram lentils)

50g Moong Dhal (Green Gram lentils)

50g Chana Dhal (split chick peas)

½ tsp garam masala

10 green chillies

1kg plain yoghurt

1 tsp white cumin seed (zeera)

1 tsp salt

½ tsp coriander powder

½ tsp baking powder

2 chopped red chillies for garnish

Oil for shallow frying

Method:

  1. Wash the lentils and leave for 50 minutes. Grind the lentils in a food processor and work until well ground. Remove the mixture from the food processor.
  2. Add the fresh coriander, garam masala, salt, baking powder, chopped green chillies.
  3. Heat the oil in a wok and gently drop in 1tsp lentil mixture and fry for 2-4 mins or until golden brown. Drain the dumplings and put to the side to cool.
  4. Mix yoghurt in a separate bowl and add salt, chopped red chillies, garam masala mix well before adding dumplings to the mix.
  5. Garnish the dish with chopped coriander and some chopped red chillies.
